Butternut Squash Casserole

Ingredients

  • CRUNCHY CEREAL TOPPING:
  • 2 cups cooked and mashed butternut squash
  • 3 large eggs
  • 3/4 cup sugar
  • 1/3 cup butter,softened
  • 1/3 cup milk
  • 1 tsp ginger
  • 1/2 tsp coconut flavoring
  • 1 1/2 cups cornflake cereal crumbs
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup chopped pecans
  • 1/4 cup butter, melted

Preparation

Step 1

Combine first 7 ingredients; pour into greased casserole dish. Bake at 350 for 35 minutes. Sprinkle with Cereal Topping and bake 10 more minutes.
