Grape Pie

A great tasting pie for the grape lover. This is a recipe that a friend of my mother shared with us.

Ingredients

  • 1 C Dark Blue Concord Grapes, Seeds removed
  • 1 C Sugar
  • 4 Eggs, separated
  • 2 Tbsp. Water
  • 1/2 C Butter
  • 2 Tbsp. Flour
  • 1 Unbaked Pie Shell
  • 1 1/2 Tsp. Cream of Tarter
  • 8 Tbsp. Sugar

Preparation

Step 1

Mix Flour and Sugar together. Add Water and Butter and cook in a saucepan over medium heat until it begins to thicken. In a small bowl beat Egg Yolks and add to the ingredients in the saucepan mixing thoroughly. Add the Grapes and cook for a few more minutes. Allow to slightly cool and then pour into the pie shell. Place in a preheated 400 degrees and bake for ten minutes. Reduce oven temperature to 350 degrees and bake for twenty minutes. Remove from oven and allow to cool while making meringue. Turn oven up to 400 degrees at this time for the meringue. Place 4 Egg Whites in a small bowl and add Cream of Tarter and beat with hand held mixer. Add the eight tbsp. sugar gradually, and continue beating until the meringue holds a peak. Spoon meringue over pie and place in the oven. Leave pie in the oven until the meringue begins to turn brown. Remove and allow to cool.
