Ingredients
- 2 pds sweet potatoes (6 medium)
- 1/3 cup pure maple syrup or maple flavored syrup
- 2 TBSP cooking oil
- 3 TBSP Dijon style mustard
- 1/2 tsp salt & 1/2 tsp freshly ground pepper
- 1/2 cup fresh cranberries
Preparation
Step 1
Preheat oven to 400 Peel and cut potatoes into 1-1/2" chunks. In a large bowl, combine maple syrup, oil, mustard, salt & pepper, add sweet potatoes & cranberries toss to coat. Spread mixture evenly in a greased 9x13" baking dish. Bake uncovered for 30-35 minutes or until potatoes are glazed & tender, stirring twice
