bars - Coconut Brownie Bars

Ingredients

  • Brownie:
  • 1/2 cup almond flour
  • 1/4 cup raw pecans
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons raw cacao powder
  • 1/2 tablespoon raw honey
  • Coconut:
  • 5 tablespoons coconut milk
  • 2 tablespoons coconut butter
  • 1 cup shredded coconut, unsweetened
  • 1 to 2 tablespoon honey (add more if you like it sweeter)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • pinch of salt

Preparation

Step 1

Brownie:
chop the pecans in a food processor and mix with the almond flour, vanilla, coconut oil cacao powder and honey
line an 8×8 baking dish with parchment paper and evenly spread the brownie batter in the dish. You will end up with a thin layer. double the recipe if you prefer it to be thicker.
Coconut:
mix all the ingredients for the coconut layer together and pour it evenly over the brownie
bake for 12 minutes at 350°F or until set
let it cook on a wire rack before cutting into squares
