Muffaletta Antipasto Salad

Ingredients

  • 1 cup mixed good quality olives; cut in half
  • 2 cup giardiniera salad; drained
  • 1/4 cup sun dried tomatoes; diced
  • 1 bell peppers (red, green, yellow); diced
  • 1/2 red onion; diced
  • 1/2 pound salami; diced
  • 1/2 pound ham; diced
  • 1/2 pound provolone cheese; diced
  • 3 tablespoon wine vinegar
  • 1/2 cup extra-virgin olive oil, eyeball it

Preparation

Step 1

Combine all ingredients, dress with vinegar and olive oil. Let stand a few minutes before serving.
