Ingredients

  • 1/2 Med. Onion (diced)
  • 1/2 Stick Butter
  • 1 Tbls Garlic
  • 1 Can Tomato Juice - 46 oz. can
  • 1 - 2 lb. Bag Frozen mixed vegetables
  • 3 Tbls Chicken soup base
  • 1/2 Gal. Water
  • 3 Med. Potatoes - cut in 1/2" cubes
  • 2 Med. Tomatoes - cut in 1/2" cubes
  • 1 Sm. Head of Cabbage - shredded
  • 1/4 Tsp Pepper
  • 1/8 Tsp Salt
  • 1 Tsp Thyme
  • 1 Bay Leaf

Preparation

Step 1

In a large sauce pan combine onions, garlic & butter and cook until onions are clear. Being careful not to burn.

Add remaining ingredients and cook over medium heat until potatoes are cooked.

Remove Bay Leaf before serving.
