Peking Rollups

Ingredients

  • 8 8 inch flour tortilla
  • 2 tablespoon honey
  • 2 tablespoon soy sauce
  • 1 tablespoon ginger; grated
  • 1/8 teaspoon cayenne
  • 2 clove garlic; crushed
  • 6 boneless chicken breasts or thighs
  • 1 teaspoon vegetable oil
  • 1/4 cup hoisin sauce
  • 1/2 cucumber; seedless, thinly sliced
  • 2 green onion; thinly sliced

Preparation

Step 1


Stack tortillas and wrap in foil. In small bowl, mix honey, soy sauce,
ginger, ground red pepper, and garlic until blended. Set aside tortillas
and mixture.

Coat chicken with oil and girll 5 minutes, turning once. Brush with honey
mixture and cook 5 - 7 minutes longer or until juices run clear, turning
over once.

Warm tortillas.

Thinly slice chicken. Spread hoisin sauce on one side of tortillas; top
with chicken, cucumber, and green onions and roll up to serve.
