Slow-Cooker Beef and Vegetable Stew

Ingredients

  • 2 lbs lean beef stew meat
  • 1 large onion, sliced into rings
  • 16 oz baby carrots
  • 3 medium russet potatoes, cut into 1 1/2" cubes
  • 2 tsp sugar
  • 1/2 tsp salt
  • 2 tsp pearl tapioca
  • 1 (11.5 oz) can tomato juice

Preparation

Step 1

1. Place stew meat in bottom of slow-cooker.
2. Cover with onion, carrots and potatoes.
3. Combine sugar, salt and tapioca. Sprinkle over vegetables.
4. Pour juice over all ingredients.
5. Cook on low 8-10 hours or high 5-6.
