TORTELLINI (Kay Pollard)

Ingredients

  • Olive oil
  • Garlic clove
  • 1/2 sm. can tomato paste
  • 1/2 pt. cream
  • 1 tbsp. basil and or oregano
  • 1 tsp. parsley
  • 1/2 tsp. nutmeg
  • A little cayenne pepper
  • 1/4 to 1/2 c. grated Parmesan cheese
  • 1 pkg. cooked fresh tortellini

Preparation

Step 1

Saute garlic in olive oil; add tomato paste and slightly warm. Whisk in cream until mixture is smooth along with all other ingredients. Serve over tortellini.
Variations: Add 1/2 package thawed frozen peas or crumbled bacon or whatever. Good for after practice because it is easy and quick.
