Ingredients
- 1 1/2 pound chicken, cooked
- 1/2 cup oil
- 1 cup onions, chopped
- 1 garlic clove
- 1 cup green pepper, diced
- 2 1/2 cups tomatoes
- 1 (12oz) can corn
- 1 tsp salt, divided
- 1 1/2 tbs chili powder
- 1/4 tsp pepper
- 1 cup cornmeal, divided
- 1 cup water
- 1 cup ripe olives, pitted
- 1 1/2 cups milk
- 2 tbs butter
- 1 cup grated cheese
- 2 eggs, slightly beaten
Preparation
Step 1
1. Brown chicken with oil, onions and garlic, stirring until onions and garlic are golden brown. Stir in tomatoes, corn, 1/2 tsp salt, chili powder. and peppers.
2. Simmer for 5 minutes. Stir in 1/2 cup cornmeal mixed with water. Simmer and cover for 10 minutes.
3. Add olives. Pour mixture into a 3 quart casserole dish.
4. Heat milk, 1/2 tsp salt, and butter. Stir in 1/2 cup cornmeal, stirring until thick. Remove from heat. Stir in grated cheese and eggs.
5. Pour over chicken mixture and bake in oven at 375F for 30 to 40 minutes.
