Peach Melba

Ingredients

  • 10-12 oz frozen raspberries
  • 1/2 cup currant jelly
  • 2 tablespoon corn starch
  • 2 tablespoon Water
  • 6 canned peach halves
  • 1 vanilla ice cream

Preparation

Step 1


Place raspberries in bowl. Thaw in microwave three minutes. Mash with a
spoon and sieve, to separate seeds. Add corn starch, miced with water, and
jelly. Microwave until clear and mixture thickens, whisking often. Chill.

Place peach half, cut side up, in dessert dish. Top with scoop of ice
cream. Pour cooled sauce over.
