Ingredients
- 1 medium cucumber, peeled, seeded, coarsely chopped
- 1/4 pound feta cheese, crumbled
- 1/2 cup plain yogurt
- 2 tbsp chopped chives
- salt to taste
- 1 pound fresh spinach, stemmed, washed and dried
- 2 medium tomatoes, each cored and cut into 8 wedges
Preparation
Step 1
1. Combine cucumber, feta and yogurt in a bowl or food processor. Process until smooth. Scraping down the bowl once or twice as necessary. Transfer dressing to a small bowl. Stir in chives and salt.
2. Combine spinach, tomatoes and dressing in a large bowl. Toss until evenly coasted. Divide among 4 salad plates.
