Ingredients
- 2 pounds dried pinto beans
- 1 Pound sliced smoked bacon, cut in to 1 inch pieces
- 2 medium tomatoes, diced
- 1 1/2 tablespoons ground cumin
- 1 1/2 tablespoons chili powder
- 2 garlic cloves, minced
- 1 jalapeno pepper, minced
- Salt
Preparation
Step 1
Place beans in large heavy saucepan. Cover with water and bring to boil. Drain. Return to sauce pan. Add enough water to cover by 2 to 3 inches. Add remaining ingredients except salt. Bring mixture to boil. reduce heat to low and simmer about 3.5 hours or until beans are very soft, adding more water as necessary to keep beans submerged. Season to taste with salt and cook 15 minutes longer, uncovered, if liquid is thin.
