Lemon Bars

Ingredients

  • 1/2 cup butter
  • 1/4 cup powdered sugar
  • pinch of salt
  • 1 cup plus 3 tbs flour, divided
  • 2 eggs
  • 1 1/4 cup sugar, divided
  • 3 tbs lemon juice

Preparation

Step 1

Crust:
1. In a mixer bowl, cream butter, 1/4 cup sugar, salt and 1 cup flour. Mix well. Pat into a 8" pan. Bake at 350F for 20 minutes.

Filling:
1.Mix eggs with a hand mixer in a medium bowl. Add 1 cup sugar, remaining 3 tbs flour and lemon juice. Mix well.

2. Spread over baked crust in pan. Bake at 350F for another 25 minutes.

3. Sprinkle top with powdered sugar while warm.
