Ingredients
- 2 TBS Extra Olive Oil
- 1/4 Cup Butter
- 1 Cup Diced Onions
- 1/4 Cup Diced Leeks
- 1 TBS Garlic, mashed and minced
- 1/2 Cup Diced Celery
- 1/2 Cup Diced Carrots
- 1 Cup Diced Potatoes
- 1/2 Cup Diced Zucchini
- 1 MED Portobello Mushroom
- 1 TSP Salt
- 1/2 TSP Black Pepper
- 1 TBS Dried Basil
- 1 1/2 cup Fresh Kale, stemmed and chopped
- 2 Cups Diced tomatoes
- 2 Cups Vegetable Stock
- 1/4 Cup Garbanzo Beans
- 1 TSP Dried Porcini Mushroom
Preparation
Step 1
Heat pan; add oil and butter; sauté onion, leeks and garlic (slow and gently). Add celery, carrots, potatoes, zucchini, mushrooms, deglazing w/stock. Add seasoning and remaining ingredients.
