    Cup Diced Onions

  • ¼

    Cup Diced Leeks

    TBS Garlic, mashed and minced

  • ½

    Cup Diced Celery

  • ½

    Cup Diced Carrots

  • 1

    Cup Diced Potatoes

    Cup Diced Zucchini

  • 1

    MED Portobello Mushroom

  • 1

    TSP Salt

  • ½

    TSP Black Pepper

    TBS Dried Basil

  • cup Fresh Kale, stemmed and chopped

    Cups Diced tomatoes

    Cups Vegetable Stock

    Cup Garbanzo Beans

    TSP Dried Porcini Mushroom

Directions

Heat pan; add oil and butter; sauté onion, leeks and garlic (slow and gently). Add celery, carrots, potatoes, zucchini, mushrooms, deglazing w/stock. Add seasoning and remaining ingredients.
