  • 2 TBS Extra Olive Oil
  • 1/4 Cup Butter
  • 1 Cup Diced Onions
  • 1/4 Cup Diced Leeks
  • 1 TBS Garlic, mashed and minced
  • 1/2 Cup Diced Celery
  • 1/2 Cup Diced Carrots
  • 1 Cup Diced Potatoes
  • 1/2 Cup Diced Zucchini
  • 1 MED Portobello Mushroom
  • 1 TSP Salt
  • 1/2 TSP Black Pepper
  • 1 TBS Dried Basil
  • 1 1/2 cup Fresh Kale, stemmed and chopped
  • 2 Cups Diced tomatoes
  • 2 Cups Vegetable Stock
  • 1/4 Cup Garbanzo Beans
  • 1 TSP Dried Porcini Mushroom

Preparation

Step 1

Heat pan; add oil and butter; sauté onion, leeks and garlic (slow and gently). Add celery, carrots, potatoes, zucchini, mushrooms, deglazing w/stock. Add seasoning and remaining ingredients.
