Peanut Brittle | Heirloom Recipe

You'll need a good candy thermometer for this.

Ingredients

  • 2 cups sugar
  • 1 cup corn syrup
  • 1/2 t vanilla
  • 1 T margarine
  • 1/2 cup water
  • 2 cups peanuts
  • 1 1/2 t baking soda

Preparation

Step 1

Add sugar, corn syrup, vanilla, margarine, water and peanuts to a large, deep pot (~6 qt pot).

Over medium high heat, and stirring constantly, boil until the mixture reaches 290F.

Remove from heat and stir in the baking soda.

Stir until well mixed and pour into pre-greased jelly-roll sheet.

Set out until it's cool enough to break apart.
