Southwest Chicken Stromboli

Ingredients

  • Filling:
  • 3/4 C warm water
  • 1 T veg oil
  • 1 T powdered milk
  • 1 T sugar
  • 2 1/4 C flour
  • 1/4 C corn meal
  • 1 t active yeast
  • 1 small onion chopped
  • 1 yellow pepper chopped
  • 1 T veg oil
  • 1 1/2 C cooked and shredded chicken
  • 3/4 C salsa
  • 3/4 C shredded Mexican blend cheese
  • 1/2 C refried beans
  • 3/4 t ground cumin
  • 1/4 t garlic powder
  • 1/4 t chili powder
  • 1/4 t dried oregano
  • Egg wash:
  • 1 beaten egg white
  • 1 T water
  • sour cream to top

Preparation

Step 1

Put first 8 ingredients in bread machine in order listed. Set to dough setting and after first 5 minutes of mixing check dough and if needed add 1 or 2 T of water or flour. In skillet sauté onion and pepper in veg oil until crisply tender. Stir in chicken, salsa, cheese, beans, and seasonings. When heated through set aside. When dough cycle is complete, turn dough out onto a floured surface and roll into 14" x 12" rectangle. Spread the filling over half the dough to within 1/2" of edge. Fold the remaining dough over the filling and seal tucking edges under. Whisk the egg wash and brush over the dough. Cut slits in the top of the roll and place on ungreased baking sheet. Bake at 350 for 25-30 minutes until golden brown. Let stand 5 minutes before cutting. Top with sour cream just before serving.
