Hog Fish - Cajun Style

This is a marinade that leans toward a cajun flair.

Ingredients

  • 1 C Virgin Dark Olive Oil (Chipotle)
  • 3 T Old Bay seasoning
  • 1 t Garlic Powder
  • dash of Salt
  • couple of dashes of Pepper
  • 1/2 t Crushed Red Pepper
  • ~ 2 lbs Hog Fish

Preparation

Step 1

Mix ingredients all together and add fillets. Let marinate for 1 hour at room temperature in a shallow bowl or dish. Keep flipping and coating. Put fish in a grill basket and put on medium grill with lid closed. Turn 1 time about 5 minutes on each side (give or take...depends on thickness).
