Pasta with mushrooms, bacon, onions, cheese

Ingredients

  • 2 packages Seitenbacher noodles (any GF pasta)
  • 1 12oz box button mushrooms, sliced, sauteed in
  • olive oil, then chopped up fine
  • 3 medium onions chopped up, sauteed in butter and
  • olive oil
  • 1 lb bacon cooked til crisp,then crumbled
  • 3 eggs
  • 5 heaping tbsp Italian parsley, chopped fine
  • You can cook the mushrooms, onions, and bacon in
  • advance, then combine in a bowl. Refrigerate if to
  • to be used later

Preparation

Step 1

Cook pasta per package directions
While pasta is cooking, in a large bowl, beat eggs,
add parsley, 1/2 Parmesan cheese,mix well.
Drain pasta, add to egg mixture immediately, and
mix well. the heat from pasta will cook eggs.
Add heated mushroom, onions, and bacon. Mix well
Add rest of cheese and sprinkle some on top
May add a little olive oil if needed to add a little
moistureto the dish, if needed
