Ingredients
- 2 1/4 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ginger
- 1/4 cup butter
- 1/2 cup golden raisins
- 1/4 cup candied ginger, finely chopped
- 3 tbsp honey
- 3/4 cup 18% cream
- 2 tbsp white vinegar
- 1 egg yolk
- 2 tbsp 18% cream
- 1 tsp honey
Preparation
Step 1
Preheat oven to 400F. In a large bowl, sift flour, baking soda, baking powder, salt and ground ginger. Using a pastry blender, blend in butter until mixture resembles course crumbs. Stir in raisins and candy ginger.
In a small pan, heat honey and 3/4 cup cream and stir until blended. Remove from heat and add vinegar and egg yolk. Stir to combine. Add the wet mixture to the flour mixture and stir till the dough holds together. Roll dough onto a lightly floured surface, briefly knead. Smooth and roll dough into a circle, 1 1/2" thick. Using knife, cut dough into 8 pieces, place on baking sheet.
Mix 2 tbsp cream and 1 tsp honey. Brush top of scone with mixture. Bake 12 - 15 mins. or until tops golden.
