BROCCOLI CHEDDAR SOUP

Ingredients

  • 4 Cups Chopped Broccoli
  • 1/2 ½ Cup Butter
  • 1 Medium Onion Chopped
  • 3 Cloves Garlic Chopped
  • 1/2 ½ Cup Flour
  • Salt to Taste
  • Pepper to Taste
  • 2 Cups Milk
  • 3 Cups Chicken Broth
  • 1 1/2 1 ½ Cups Grated Cheddar Cheese

Preparation

Step 1

Cook broccoli, drain. Save water broccoli was boiled in for making chicken stock. Set aside. Saute onions in butter. Stir in flour. Cook 5 minutes. Add milk slowly, continually stirring. Gradually add shredded cheese, stirring continually, blend in until smooth. Slowly blend in chicken broth. Add broccoli. Simmer at least 15 minutes, longer for thicker soup.
