Ingredients
- 1 lb. Fusilli, penne or short pasta
- 6 T Olive oil
- 1/2 ½ sm. Onion, chopped
- 2 Garlic cloves, chopped
- 28 oz. Crushed tomatoes
- 1 C Black olives, halved
- 1 t Anchovy paste
- 2 sm. Dried red chilies, or 1 t red pepper flakes
- 1 t Basil
- 1/4 ¼ C Romano cheese
Preparation
Step 1
1. Cook pasta according to package directions.
2. Heat oil over med-low heat. Sauté onion and garlic. Add tomatoes and simmer 20 minutes.
3. Add olives, anchovy, chilies, simmer 15 minutes more.
4. Stir basil and cheese into sauce. Pour over pasta and toss.
5. Serve topped with additional cheese.
