Spinach Madeline

Ingredients

  • 2 pkg. frozen chopped spinach
  • 4 Tbs. butter
  • 1/2 c spinach water
  • 1/2 tsp. black pepper
  • 6 oz. roll of jalapeno cheese
  • 2 Tbs. chopped onion
  • 2 Tbs. flour
  • 1/2 cup evaporated milk
  • 3/4 tsp. garlic salt

Preparation

Step 1

Cook and drain spinach, saving water. Fry onion in butter until tender. Add flour, water, evaporated milk, pepper and salt. Add cheese, stirring until melted. Add spinach, and place in casserole dish. Top with bread crumbs. Cook at 350º for 1 hour.
