Zucchini Bread

Ingredients

  • 2 cups flour
  • 3 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 2 tsp vanilla
  • 2 cups shredded zucchini
  • nuts of your choice

Preparation

Step 1

Beat eggs and add sugar, oil, vanilla and zucchini. Fold in dry ingredients. Fold in the amount of nuts of your choice if desired. Place in 2 standard loaf pans or 6 mini pans that have been greased and floured. Bake large loaves 50 minutes and bake mini loaves 45 minutes in a 350 oven. Cool in pan on racks for 30 min.
