Ingredients
- 3 tbsp vegetable oil
- 1 8 oz. package firm tofu, drained, cut into 2 in. cubes and dried on paper towel
- 2 garlic cloves, minced
- 1 eggplant, cut into 1 by 3 in. strips
- 1 small red bell pepper, cut into 1 in pieces
- 1/3 c reduced sodium soy sauce
- 2 tbsp each sugar and vegetarian oyster sauce
- 1/4 c basil leaves
Preparation
Step 1
Heat oil in a large nonstick frying pan over medium heat until hot, add tofu and gently cook, turning tofu occassionally, until browned slighlty, about 10 minutes. use a slotted spoon to transfer tofu to a plate.
add garlic, eggplant and bell pepper to pan and cook until softened, stirring occassionally, 12 to 15 minutes. add soy sauce, sugar and oyster sauce and cook until heated, another 2 minutes. return tofu to pan and gently stir to coat. remove from heat and stir in basil.
