Ingredients
- 2 - 3 small/medium zucchini
- 2 eggs + 1 egg yolk
- 1 t. marjoram
- salt
- fresh ground pepper
- 1 C. heavy cream
- 1/2 - 1 C. grated cheese (cheddar)
Preparation
Step 1
Grate zucchini, salt, drain, squeeze out remaining liquid in paper towels. Cook over medium heat to dry out.
Add eggs and remaining ingredients to zucchini. Pour into unbaked pie shell (recipe - Spinich Ricotta Pie). Top with cheese. Bake at 350 degrees for 40 - 45 minutes. Let sit for 10 - 15 minutes before serving.
