SWEET AND SPICY ROASTED ALMONDS

Ingredients

  • Whisk together till foamy:
  • 1 egg white
  • 1 Tbsp water
  • Add:
  • 1 lb (3 cups) almonds
  • Toss to coat; drain in sieve.
  • Stir together:
  • 1/4 cup sugar
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp coarse salt
  • 11/2 tsp ground red pepper

Preparation

Step 1

Add almonds and toss to coat. Spread on baking sheet in single layer. Bake for 30 minutes. Stir gently. Reduce heat to 200 F and bake for 30 minutes, till nuts are dry and toasted. Cool completely. Makes 3 cups.
