SWEET AND SPICY ROASTED ALMONDS

Ingredients
- Whisk together till foamy:
- 1 egg white
- 1 Tbsp water
- Add:
- 1 lb (3 cups) almonds
- Toss to coat; drain in sieve.
- Stir together:
- 1/4 cup sugar
- 2 tsp ground cumin
- 1 tsp ground coriander
- 2 tsp coarse salt
- 11/2 tsp ground red pepper

Step 1
Add almonds and toss to coat. Spread on baking sheet in single layer. Bake for 30 minutes. Stir gently. Reduce heat to 200 F and bake for 30 minutes, till nuts are dry and toasted. Cool completely. Makes 3 cups.
