Corn Relish

Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped red onion
  • 2 medium seeded jalapenos finely chopped
  • 1 cup fresh corn kernels
  • 1/2 ½ teaspoon sea salt
  • 3/4 ¾ teaspoon crushed red pepper
  • 3 tablespoon fresh lime juice
  • 1 tablespoon honey

Preparation

Step 1

Heat oil in medium skillet over medium heat.
Add onion and jalapenos and cook for one minute. Add corn and continue to cook until vegetables are slightly soft, about five minutes. Remove from heat and toss with remaining ingredients. Cool and serve at room temperature over whatever.
