Coconut Peaks (Tammy Wilson)

Ingredients

  • 1/4 C. butter
  • 2 C. sifted confectioners sugar
  • 3 C. flaked coconut, snipped
  • 1/4 C. light cream (half & half)
  • 6 oz. pkg. semi sweet chocolate pieces + 1 C. chocolate pieces
  • 2 t. shortening

Preparation

Step 1

In a saucepan, slowly heat butter till golden brown. Gradually stir in sugar, coconut and cream.
Drop by teaspoonfuls onto waxed paper. Refrigerate till easy to handle then shape into peaks.
Over hot, not boiling water, mett chocolate pieces and shortening . Stir until smooth.
Dip bottom of peaks into chocolate, let harden on wax paper. Using a spoon let a small amount of chocolate run
down from top of peak.
