Ingredients
- 1 onion, cut into 1/4-inch wedges
- 2 C chopped romaine lettuce
- 1/2 C crumbled Blue cheese
- 2 T water
- 1/4 t salt
- 1 1/2 T red wine vinegar
- 4 (8-inch) flour tortillas
- 1/2 t black pepper
- 2 C sliced mushrooms
- 12 oz top round steak
- 1 red bell pepper, cut into 1/4-inch strips
- 2 t dry mustard
- Cooking spray
- 1/4 t garlic powder
Preparation
Step 1
Slice steak into 1/4-inch strips and set aside. Combine mustard, pepper, garlic and salt in a large bowl. Add beef and toss to coat. Add beef to skillet coated with cooking spray; saute 4 minutes. Remove from pan and keep warm. Add mushrooms, onions, and bell pepper to skillet; saute 2 minutes. Add water and cook 5 minutes. Stir in beef mixture and vinegar. Remove from heat and stir in cheese. Warm tortillas and fill with beef mixture and lettuce.
