Lemon Meringue Pie

Ingredients

  • 1 (9 inch) baked pastry shell
  • 6 tbsp. cornstarch
  • 4 eggs separated
  • 2 tbsp. margarine or butter
  • 1 2/3 c. sugar
  • 1/2 c. lemon juice
  • 1 1/2 c. boiling water
  • 1/4 tsp. cream of tartar

Preparation

Step 1

Preheat oven to 350. In heavy sauce pan combine 1 1/3 c. sugar, corn starch add lemon juice. In small bowl beat egg yolks add to lemon mixture. Gradually add water stirring constantly, over med heat cook and stir until mixture bolls and thickens about 8-10 minutes. Remove from heat add ore pour into shell. Beat egg whites with cream of tartar until soft peaks form. Add remaining 1/3 c. sugar beating until stiff spread on top of pie sealing carefully to edge of shell. Bake 12 to 15 minutes or until golden brown. Cool.
