Ingredients
- 2 1/3 c. oil purpose flour
- 1 c. quick oats - ground
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. butter
- 1 c. sugar
- 1 egg
- 2 tbsp. milk
- 2 tsp. grated lemon peel
- 1 tsp. vanilla
Preparation
Step 1
Combine flour, oats, baking powder and oil. Beat butter and sugar until light and fluffy. Add egg, milk, lemon peel and vanilla. Add all ingredients to butter mixture, mixing well. Cover chills 2-3 hours. Heat oven to 350. Roll dough to 1/8 in thickens or lightly floured surface. Cut with flour assorted 2 - 3 inch cookie cutler. Place on un buttered cookie sheet. Bake 8-10 minutes. Cool 1 minute. Place 20 of oats in blender. Cover 60 seconds. Makes 1 1/2 c.
