Fettuccini Carbonara

This recipe originally called for mixing eggs with noodles without cooking them. Although it made the coating thicker, uncooked eggs can be a problem.

Ingredients

  • 1/4 ¼ lb. Bacon
  • 12 oz. Fettuccini
  • 1/4 ¼ C Butter, softened
  • 1 C Heavy cream, room temp.
  • 1/2 ½ C Parmesan cheese, grated
  • 2 Eggs, slightly beaten
  • 2 T Parsley, chopped

Preparation

Step 1

1. Cook fettuccini according to package directions.

2. Fry bacon to crisp. Drain well and crumble. Reserve.

3. In large dish, toss noodles with bacon.

4. Melt butter in saucepan. Add cream, cheese and eggs. Cook until thoroughly mixed.

5. Toss sauce and parsley with noodles, coating noodles well.
