- SALMON CROQUETTES

- 1 can (14 oz) salmon
- 2 cups bread crumbs
- 1/3 cup onion -- finely minced
- 1/4 cup milk
- 2 eggs
- 2 tablespoons minced parsley
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon dillweed
- dash pepper
Preparation
Step 1
Drain salmon reserving 2 tablespoons liquid.
Flake salmon.
Combine all ingredients including reserved liquid.
Shape into 8 - 1" thick patties.
Pan fry on both sides until golden brown.
