Buffalo Chicken Lettuce Wraps

2 large or 4 small servings

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 tsp chipotle powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • sea salt and black pepper to taste
  • 2 Tbsp coconut oil
  • 1 head of butter lettuce
  • 1 avocado, sliced
  • 1/2 cup cherry or grape tomatoes, halved
  • 2 tbsp. chopped green onions

Preparation

Step 1

Slice the chicken thighs into 1/4 inch strips. Toss the chicken in a mixing bowl with the spices. In a skillet over medium heat, melt the coconut oil and then place the chicken in the skillet. Cook 5-10 minutes, until chicken is white all the way through. Serve in lettuce cups and top with sliced avocado, halved tomatoes and chopped green onions.
