Frosted Cinnamon Zucchini Bars

Ingredients

  • Frosting:
  • 3/4 cup butter or margarine, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 cups shredded zucchini
  • 1 cup flaked coconut
  • 3/4 cup chopped walnuts
  • 2 cups confectioners' sugar
  • 1 tsp ground cinnamon
  • 2 Tbsp butter or margarine, melted
  • 1 tsp vanilla extract
  • 2 Tbsp milk

Preparation

Step 1

In a mixing bowl, cream butter and sugars. Add the eggs, one a time, beating well after each addition. Beat in vanilla. Combine flour and baking powder, gradually add to the creamed mixture. Stir in zucchini, coconut and nuts.

Spread into a greased 15x10x1 baking pan. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

In a bowl, combine sugar and cinnamon. Stir in butter, vanilla and enough milk until frosting reached spreading consistency. Frost cooled bars and cut.
