Ingredients
- 1 lb. rigatoni
- 1 lb. sausage with casing removed
- 2 tsp. olive oil
- 2 cloves garlic, thinly sliced
- 1/2 c. low sodium chicken broth
- 5 oz fresh baby spinach
- 4T. grated parmesan cheese
Preparation
Step 1
1) cook pasta to your preference
2) meanwhile, coat a large skillet with pam. add sausage, cook breaking up clumps and stirring, 7 minutes or until browned. add oil and garlic; cook about 30 seconds. stir in broth. add spinach; cover and cook until wilted, about 2-3 minutes. stir to combine; add parmesan
3) drain pasta, reserve 1/2 c. of the pasta water. place pasta in a large serving bowl; add reserved pasta water if you like a soupier dish. add sausage mixture; toss to combine
