Country Club Squash

Ingredients

  • 1/2 c. boiling water
  • 2 lbs. yellow squash, sliced
  • 1/2 c. chopped onion
  • 1 c. sour cream
  • 1/2 t. salt
  • 1/4 t. pepper
  • 1/4 t. basil
  • 1 c. soft breadcrumbs
  • 1/2 c. shredded cheddar or swiss cheese
  • 1/3 c. butter, melted
  • 1/2 t. paprika
  • 8 slices bacon, crisp-cooked & crumbled

Preparation

Step 1

Cook the squash and onion in the water until tender. Drain and mash. Mix the squash mixture and the next 4 ingredients in a bowl. Spoon into a greased 2 qt. baking dish. Sprinkle with a mixture of the bread crumbs, cheese, butter and paprika. Top with the bacon. Bake at 300 for 20-25 minutes or until heated through.
