Jerk Pork Nachos

Ingredients

  • 8 cups tortilla chips
  • 1 lb. pork tenderloin
  • 1/4 cup jerk seasoning
  • 1 cup diced pineapple
  • 3 cups shredded pepper jack cheese
  • sliced fresh jalapenos
  • cilantro
  • lime juice

Preparation

Step 1

1. Rub pork tenderloin with jerk seasoning, grill, then chop.

2. Spread chips on rimmed baking sheet or in a shallow dish.

3. Top chips with pork, pineapple and cheese.
Bake at 475 deg. in the upper third of the oven until melted, about 5 min.

4. Top with jalapenos, cilantro and lime juice.
