Ingredients
- 3 slices bacon, chopped
- 4 tsp olive oil, divided
- 4 med onions, thinly sliced
- 1/2 tsp dried crushed red pepper
- 12 oz spaghetti or linguine
- 4 lg eggs
- 1 6 oz pkg baby spinach
- 1/3 cup grated romano
Preparation
Step 1
1.Saute bacon in large skillet over medium heat until crisp. Transfer to paper towels. Pour off all but 1 tbs drippings.
2.Add 3 tbs olive oil and onions and saute until deep golden brown-about 20 minutes. Stir in red pepper. Season with salt & pepper. Remove from heat & cover to keep warm
3.Cook pasta. Drain and reserve 1/2 cup liquid. Return pasta to pot and add onions. Cover to keep warm.
4.Heat remaining oil in large skillet over medium heat. Crack eggs into skillet and fry until whites are set but yolks still soft-about 4 minutes.
5.Add spinach, cheese, eggs & bacon to pasta. Toss. Add liquid to moisten. Season with salt & pepper.
