Chicken Enchilada

Ingredients

  • 2 Cups Cooked Chicken, chopped
  • 2 Cups Low fat Sour Cream
  • 1 Can Cream of Chicken Soup
  • 2 Cups of Grated Mozzarella Cheese
  • 1/2 Medium Onion, chopped
  • 1 Small Can chopped green chilies
  • 1/4 Tsp Garlic Powder
  • 1 Tblsp of Cumin
  • 1 Tblsp of Chili Powder
  • 1 Package (10) Regular Size Flour Tortillas

Preparation

Step 1

Combine all ingredients except tortillas and mix well. Place 1/2 Cup (heaping) of mixture on each tortilla; roll up. Spread a shallow layer of mixture over bottom of a 13”x9” Pyrex dish. Pleas each rolled tortilla, seam side down, in dish. Top with any remaining mixture. Cover; bake in 350F oven for 20 minutes. If desired, sprinkle with more grated cheddar cheese and bake, uncovered, an additional 5 minutes. Serve
