SAVORY CHEESE-STUFFED MUSHROOMS

Ingredients

  • 36 mushrooms
  • 3 Tbs. butter
  • 1/4 c. minced green pepper
  • 2 Tbs. minced pimiento
  • 1/4 c. minced onion
  • 1 1/2 c. soft bread crumbs
  • 3/4 c. shredded Monterey Jack cheese
  • 1/2 tsp. salt
  • 1/2 tsp. crushed thyme
  • 1/4 tsp. ground turmeric
  • 1/4 tsp. ground pepper
  • 1 Tbs. butter

Preparation

Step 1

Remove stems and mince enough to measure 1/3 cup.
Melt 2 Tbsp. butter, add mushroom stems, green pepper, pimiento and onion. Cook and stir until tender, 5 to 7 minutes.
Remove from heat; stir in remaining ingredients except mushroom caps and 1 Tbsp. butter.
Melt remaining 1 Tbsp. butter in a shallow baking pan. Fill mushroom caps and place in pan. Bake in 350 degree oven for 15 to 20 minutes, till lightly browned.
