Ingredients
- 1/4 c ground almonds
- 1/8 c vegan parmesan
- 1/8 c nooch
- 1/4 t Hawaiian pink or other salt
- 1 clove garlic, minced
- 1/4 t smoked paprika
- cracked black pepper
- 2 T hemp or other nut milk
- 2 1/2 c 1/4 inch slices zucchini
- olive oil
Preparation
Step 1
preheat oven to 425'F
combine first 7 ingredients with a whisk
place milk in a shallow container
dip zucchini slices in nut milk and dredge in dry mix
place coated slices on and iron proof wire rack sprayed with olive oil
place rack on baking sheet
bake at 425' for 30 minutes or until browned and crispy
serve immediately
