Ingredients
- 1 Cooked turkey carcass
- 5-6 C Water
- 5 Celery stalks, chopped
- 1 Large Onion
- 4 Carrots
- 5 Garlic Cloves
- 1 t Parsley
- 1 1/2 1 ½ t Salt
- 1/4 ¼ t Pepper
- 13 oz. Peas
- 16 oz. Wide Egg Noodles
- 6 oz. Mushrooms, sautéed
Preparation
Step 1
1. Combine first 9 ingredients and bring to a boil. Skim top as needed. Simmer 1-2 hours.
2. Remove carcass, skin, and vegetables. Reserve celery, carrots and meat to add to soup.
3. Strain broth and refrigerate. Remove fat from top of broth. Season with salt, pepper, and herbs.
4. Bring to a boil. Add peas, noodles and mushrooms. Simmer until cooked.
5. Return celery, carrots, meat, and any leftover gravy. Heat through.
