Orange-Couscous

If you haven't tried couscous this is an excellent recipe to introduce it into your diet. This can be eaten warm or cold. You can pack the mixture into a container and refrigerate. Upon chilling it will turn into the consistency of a packed bread pudding. It is an excellent breakfast.

Ingredients
- 1 3/4 cup orange juice
- 1 cup uncooked couscous
- 1/3 cup chopped dried apricots, dried pineapple, dates or any other dried fruit
- 1/4 cup raisins or cranraisins
- 1 tsp cinnamon
- 1/8 tsp ground ginger
- 1 Tbsp honey
- 1/2 cup water
Preparation
Step 1
Bring 1 1/2 cups of the orange juice and the water to a boil in a small saucepan. Stir in couscous and remove from the heat, cover and allow stand for 5 minutes.
Heat the remaining 1/4 cup orange juice in another saucepan. Add apricots (dried fruit), raisins, honey, cinnamon and ginger and saute for 2 or 3 minutes.
Combine couscous and fruit mixture and spoon into serving bowls if serving at once.
