Ingredients
- CRUST
- 2 tsp melted margarine
- 2 Tbsp water
- 1 c graham cracker crumbs
- FILLING
- 1 Tbsp gelatin, unflavored
- 2 Tbsp cool water
- 1/4 c boiling water
- 1/2 c cottage cheese, lowfat
- 1/4 c skim milk
- 1 tsp vanilla extract
- 1 tsp coconut extract
- 1 1/2 Tbsp sugar
- 2 c crushed pineapple, drained
- GARNISH
- ground cinnamon
Preparation
Step 1
Preheat oven to 250 degrees
Combine ingredients for crust in ungreased 9-inch pie pan.
Pat out evenly to form crust.
Bake in preheated oven for 15 minutes. Cool.
In small bowl, soften gelatin in cool water.
Add boiling water and stir until gelatin is completely dissolved.
Transfer gelatin mixture to blender.
Add all other filling ingredients and process until smooth.
Pour filling into crust. Sprinkle top with cinnamon.
Refrigerate until firm, about 2 hours.
