Ingredients
- 2 Tbsp. extra virgin olive oil
- salt and pepper
- 3 cloves garlic, minced
- 1/4 cup rice vinegar
- 1/2 can each garbanzo beans & cannelloni beans
- 1 doz. kalamata olives, pitted
- 1/2 red onion, sliced in thin slivers
- 1/4 cup chopped red bell pepper
- 2 Tbsp. each, chopped fresh mint and parsley
- 1 12 oz. solid white tuna in water, drained
Preparation
Step 1
Makes 4 servings. In a small bowl whisk together oil, garlic, vinegar, salt and pepper and set aside dressing.
In medium bowl gently toss beans, olives, mint, and parsley. Add tuna and dressing. Add chopped red pepper and chill before serving.
