Au Gratin Potatoes

Ingredients

  • 2 pounds all-purpose potatoes, peeled
  • 2 tablespoons all purpose flour
  • 1 teaspoon salt
  • 2 scallions, trimmed and sliced
  • 4 ounces Gruyere or Emmentaler cheese, shredded
  • 2 cups half and half
  • pinch ground nutmeg
  • 2 tablespoons grated Parmesan

Preparation

Step 1

Heat oven to 375 degrees. Coast a 1 1/2 quart oval or round baking pan with nonstick cooking spray.

Slice potatoes into 1/8 inch thick slices.

Sprinkle flour and salt over potato slices and toss to coat

Layering: 1/3 of potato slices, then half the scallions, top with 1/2 cup Gruyere. Repeat with more potato, rest of scallions and another 1/2 cup cheese. Then top with remaining potato.

In a small saucepan, combine the half and half and the nutmeg and bring to a simmer. Carefully pour over potatoes and cover pan with foil. Bake for 30 minutes.

Remove foil and sprinkle with remaining cheese and Parmesan. Return to oven and bake for 25 minutes until top is brown and potatoes are tender. Let stand 15 minutes before serving.
